
2 tbsp olive oil
1 tsp Aroma Greek herbs
1kg peeled pumpkin, diced
1 large potato, peeled, diced
1L chicken/vegetable liquid stock
**Optional : 1/2 cup (125ml) thin cream
2 Slices thick cut bread diced and toasted
Heat oil in a large saucepan over low heat, add Aroma Greek.
Add pumpkin, potato & stock.
Bring to the boil.
Turn heat to low, cover and simmer for 30 minutes.
Allow to cool slightly, then blend in batches or use a stab blender in your pot.
Return soup to pan, stir through cream and reheat gently. Serve with toasted bread pieces
Add more herbs or cream if desired
